Sweet Treat How To: Blueberry Ice Cream

Ice cream is the sweet treat that no one can resist. It’s as traditional as pie (we love the two of them together, by the way). A lesser-known combo is blueberries and ice cream. The creamy-ness satisfies your sweet tooth while the little, sweet fruit adds a punch of tartness to the ice cream that keeps your tastebuds refreshed and going back for more. Check out the hype around this dynamic duo by recreating the recipe below.

Yields1 Serving

14 oz Canned evaporated milk
1 ½ tsp vanilla extract
1 ¾ cups heavy cream
4 graham crackers (crushed into pieces)
6 tbsp blueberry jam or jelly

1

Grab a large bowl and whisk together the evaporated milk and vanilla extract.

2

In a second bowl use a hand mixer (on medium speed) to whip the heavy cream until it starts to form stiff peaks (about two minutes for us!).

3

Fold the whipped cream into the evaporated milk mixture.

4

Crush your graham crackers, keeping about ¼ cup to the side.

5

Fold in the remaining crackers into your ice cream base.

6

Dot the blueberry jam on the surface of the mixture, then use a spoon to swirl it through.

7

Freeze until solid – for us, that was about 6 hours.
